A Culinary Lionfish Adventure from IHG Hotel Restaurant in Dominica

International Lionfish Hunter and Professional Scuba Instructor Roger J Muller and his wife Andrea redefine the boundaries of culinary exploration with their custom lionfish dinner at the IHG Hotel Restaurant in Dominica. This was a custom order from Roger, using a few of the 217 lionfish that he speared in the past two days. The culinary team prepared two variations of lionfish dinners, a coconut version and a spicy island style.
